Cecina or also called Farinata, socca, or torta di ceci is a savory pancake that can be used as a side dish or gluten-free bread alternative. It’s super simple and fast to do – you have to try it!

Ingredients for 1 pancake (like in the video):
50g Chickpea flour
100g Water
25g olive oil
Pine nuts
Sage leaves
Sea salt and Pepper

Preparation:
Mix a smooth dough out of chickpea flour, warm water, and olive oil. Let it rest for 30 minutes. Fry sage leaves and pine nuts for about a minute in olive oil on medium heat. Add the dough and spread it out evenly. Slowly bake the first side for about 10 minutes on low heat until golden brown and flip. Bake for another 5 minutes and slice into cake shape pieces. Finish with fresh herbs, coarse sea salt, and black pepper.
