You do not have to use wine, you can continue adding vegetable stock or water (make sure they are hot). At the end, you will make a healthy creamy mushroom risotto recipe. ABOUT RICE: Arborio rice is used in risotto, but honestly, I also tried to make it with Baldo rice, which is also a short grain rice. I found out that Baldo rice is a product of crossing between Arborio rice and Stirpe 136 rice (SCIENCE!!!). As risotto is becoming more and more popular, I believe you will find Arborio rice in your local super market. If you cannot find, just try to use a starchy rice.
