This creation came to me in a dream. I saw a friend of mine @argentexas sear steaks of provolone. So I got thinking. Why not at that and a topping or two and a sauce to a steak. I had no idea it was a thing. Until one of my followers on Tiktok told me it was an old Italian classic. Steak Pizzaiola

This is a decadent dish. It makes a statement so if you are looking to really go to the next level. Make this.

Steak Pizzaiola
Ny Strip Steak
MaD seasoning
Thyme and rosemary a few sprigs reserve a couple for bread crumbs
Olive oil
1 stick of butter cut into pads
2 cloves of garlic crushed
1/2 shallot diced
1 bottle of red wine- need one cup. Drink the rest
1/2 inch thick provolone slabs
1/4 cup mayo
1tbsp Dijon
1 tsp horseradish
Bread crumbs rough chop…I use old bread or croutons.
1 tbsp fresh chopped rosemary and thyme
1/4 cup fresh grated parm
I season the steak with
MaD seasoning my seasoning mix. Heavily.
I Let sit for 30 min.
Make mayo mix….. the n a bowl mix mayo, mustard horseradish and MaD seasoning to taste. (Two good shakes) reserve.
Crush bread crumbs and mix with chopped herbs and parm and a tbsp of olive oil. Reserve.
Heat cast iron skillet-
Then sear steak in a really hot and oiled cast iron pan.
After four min.
Flip.
Add 1/2 butter pads
Crushed whole cloves of garlic and fresh herbs still on the sprig.
Baste and let cook for 4 min.
Remove steak.
Add diced shallots and sauteฬ for 5 min or until translucent.
Deglaze with a red wine.
Let reduce by half. Au Sec…
Then add remaining pads of butter one at a time to thicken and smooth out the sauce.
While that is cooking
Heat a skillet and add two 1/2 inch slices of smoked provolone
Let crisp on one side. Then flip.
While cooking make Mayo mix
Coat steaks with a mayo, Dijon and horseradish mix. 1/4 mayo
1 tbsp Dijon
1 tsp horseradish.
Place provolone on steaks……before you coat steaks. The mayo mix goes on the provolone. Mound the bread crumbs on Dijon mixture and broil until brown.
In an 400 degree oven.
Pour sauce over steak and oh my. Itโs amazing.
