The Sicilian cartocciate

Cartocciate are a specialty of the Sicilian hot table. The peculiarity of this specialty lies in the dough which must be soft. They are a sort of calzone stuffed with cooked ham and mozzarella or tomato and mozzarella. They are ideal for a dinner, for a birthday or simply for a snack.

Ingredients:
-1 kg of flour 00;
-25 g of brewer’s yeast;
-50 g of sugar;
-30 g of salt;
-100 ml of milk + 3 spoons;
-330 ml of water at room temperature;
-100 g of lard;
-a yolk;
-cooked ham to taste;
-mozzarella for pizza to taste
