An Italian Tries Gordon Ramsay’s Carbonara Recipe | 10 Minute Spaghetti Alla Carbonara

My previous attempts to make pasta for my Italian wife, Eva, haven’t gone well. I wanted to give it another shot, though, so I decided to try a spaghetti alla carbonara recipe from the culinary master himself: Gordon Ramsay!

EVA’S AUTHENTIC SPAGHETTI ALLA CARBONARA RECIPE

In a medium mixing bowl, add one whole egg, one egg yolk and about half a cup of grated pecorino cheese (you can use parmigiano if you can’t find pecorino, just please don’t tell Eva). Salt and pepper to taste and lightly whisk.

Bring a large pot of water to boil and salt it liberally. Add desired amount of spaghetti, without breaking, and cook until al dente.

While the pasta cooks, add 1-2 cups of course-chopped guanciale or pancetta (or thick bacon if it’s all you can get but again, don’t tell Eva) into a pan heated to medium/high. Cook until the meat browns and begins to become crispy.

As soon as the pasta is finished, transfer it into the pancetta pan with a pair of tongs. Stir the sauce into the pasta over heat, then transfer all into the egg bowl. Stir vigorously and serve immediately. Top with fresh black pepper and some extra grated cheese on top.
