I have eaten this dish millions of time, especially when i was small as my mum had a backery and we had always stale bread to be used in kitchen.
That’s the simple recipe of my granny Loretta
INGREDIENTS ( 4 people)
350 gr. tuscan saltless stale bread ( *links down to make it)
1 cucumber
3 or 4 celery stalk
red tomatoes
half red onion
basil
vinegar
extra vergin olive Oil
salt
fresh water
METHOD :
Cut the stale bread into pieces or slices. Soak them in fresh water for at least 20 minutes
or until the bread becomes soft.
Meatime, slice the onions and soak them in a bowl with water, a
bit of vinegar salt and a pinch of sugar for 20 minutes. Cut the tomatoes into small pieces,
slice the cucumbers and the celery stalks. When the bread is soft, squeeze it with a lot of energy to completely eliminate the water and
then crumble it into a bowl. Remove the onions from the soak and add them to the bread.
Add all the sliced vegetables.
Add plenty of basil and season with salt, and extra virgin olive oil and bit of vinegar too if you like it.
Mix it all up, let it rest a couple of hours in the fridge and then enjoy this wonderful fresh amazing dish! BUON APPETITO
