STOVETOP PIZZA RECIPE
INGREDIENTS
1.5 cups flour (I’ve used wholemeal spelt flour)
200ml unsweetened soy milk
1.5 tbsp apple cider vinegar
2 tsp baking powder
1/2 tsp salt

PIZZA SAUCE
200g crushed tomatoes
1 heaped tbsp Italian seasoning (opt for 1/2 tsp garlic granules, 1/2 tsp basil, 1/4 tsp thyme, 1/2 tsp oregano)
1 tsp cane sugar
Salt and pepper to taste
1 tsp olive oil

OTHER INGREDIENTS
Vegan cheese (I’ve used the Violife grated mozarella for pizza)
Toppings of choice

1.Stir vinegar and soy milk together. Set aside for 10min to make a vegan buttermilk.
2.In a large mixing bowl, stir together the flour, salt and baking powder. Pour in the buttermilk and mix well, starting with a wooden spoon then with your hands, only until a ball of dough is formed and the bowl is clean.
3.Cover with a tea towel and let the dough rest for 10min.
4.Divide the dough into 6 pieces, roll each piece into a pitta bread shape on a floured surface, rotating the dough carefully to make sure it doesn’t get stick to the surface.
5.Heat up a large flat skillet over medium low heat, then fry the pitta for 1-2 min on one side until golden brown. Little air bubbles are ought to appear over the surface.
6.Flip the pitta, lower the heat to small, spread with pizza sauce then top with your favourite topping. Cover with lid and let the vegan cheese melt for 2 min. Remove from heat.
