Ingredients
500 gr of strong flour! Stroong full of gluten!
350 ml of lukewarm water
20 gr of fresh yeast (or 10 of the dry one)
2 teaspoon of salt
2 teaspoon of sugar
120 ml of extra virgin olive oil! Good one ok?? Good one.. don’t buy shit!
Aaaaand for seasoning coarse sea salt and fresh rosemary!

The first thing to do is alway to break the yeast in little pieces and dissolve it in the water
We add the sugar and keep mixing
Now we add the salt… cooking experts say that you can never put salt and yeast together because the salt kills the yeast… I always did it and never saw any murdered yeast in my pizzas and breads.. so I can easily tell you that these experts say buuuulllllshit!
Now we add part of the oil, 80 ml! Don’t hurry! No rush! relax and keep mixing!
Finally we can start adding the flour! You can strain it first but it is not absolutely necessary.
But if you do it it will come out soooft and spongeee like me, down there below during the 80’s!
This dough is fucking sticky so don’t worry if you cannot mix it with your hands it doesn’t matter.. mix it with a spatula or a wooden spoon.
After 10 minutes mixing we leave it resting in the same trace where we’re gonna cook it. Put some olive oil on the trace… if you are afraid it is gonna get stuck in the trace you can put some wet waxed paper in it!
Cover it with clingfilm and wait it raises minimum 4 hours!
And after 4 hours look look how beautiful! Look che bello!
And now it’s time to use my fingers!! (That’s what she said!)
Put your fingers in the flour first and then make many little holes in the dough!
Add coarse salt and fresh rosemary! Miiiinchia che nice smell this rosmary!
And finally we brush the rest of the olive oil! What did you think i was saving it for? Lubricant?? I am not so old eh!
And we bake it in the owen preheated at 350 degree Farenheit (180 degree celsius) you and your crazy metrics… for 20 minutes!

Aaaaand that is the result grandchildren! Look che belloo!!!!!!
Are you too lazy to do this at home? Then go and buy it ready but then don’t complain if in the “Italian restaurant” where you bought it nobody speaks italian and they give you a chewy sheeeet!!!
