✓ I was visiting Soho Vegan Market in the West End of London and came across this wonderful vegan pizzeria with two mini mobile gas fired ovens, I found it very difficult to simply walk by, i had to stop and get a pizza from them.

On the day of my visit I had the “Mambo Italiano” a Vegan pizza made with the following toppings:
* Vegan Cheese (a recipe made with Potato Starch, Coconut and Nutritional Yeast)
* Homemade Tomato Sauce.
* Black Olives
* Grilled Artichokes
* Cherry Tomatoes
* Spinach
* Drizzle of Basil Pesto
* Italian Dry Herbs mix (Rosemary, Oregano, Basil, Thyme, Black Pepper and Garlic)
+ I added Mushrooms as extra
Once the pizza is cooked in the oventhe pizza is given a drizzle of Garlic Oil.

The other pizzas on their menu use some of the following ingredients:
* Kale
* Erbela ???
* Baby Spinach
* Artichokes
* Mushrooms
* Cherry Tomatoes
* Aubergines / Eggplant
* Black Olives
* Sundried Tomatoes
* Spring Onions
* Squash and Asparagus
* Toasted Pine Nuts
* Truffle Oil
* Balsamic Glaze
* Vegan Peperoni
* Vegan fake Chicken (made with wheat protein)
* Vegan Shredded Duck

The pizza dough is made using Double Zero Flour and rolled in Semolina flour.

The dough was quickly and skilfully hand spun and stretched and then it cooked in the gas powered oven. The pizza cooked very quickly (within one & a half minutes) because the oven reaches an operating temperature of around about 400 degrees centigrade..

Many thanks to Mathew the Pizzaola who welcomed me and graciously allowed me a privileged glimpse into their vegan / vegetarian street kitchen to watch the “pizza making” action.
