In this chapter, Lulu shares with you the recipe of Piadina.
It is a typical flatbread from the Emilia-Romagna region in Italy. It is filled with different cheeses, cold cuts or local vegetables and folded in half.
This flatbread is traditionally prepared with wheat flour, pork fat, salt and water.
But modifications have been made depending on the region and family recipes. Thicker or finer, replacing the fat for butter or oil and some recipes also add baking soda or baking powder
Piadina was a fast food before there was a fast food and before it was prepared by women when they returned from working in the fields.
We have chapati in India, Roti e Asia, or tortillas in Mexico and many other varieties of flatbread around the world, but what differentiates Piadina of the hundreds of flatbreads that are made in the world?

Es un pan plano tรญpico de la regiรณn de Emilia-Romaรฑa en Italia. Que se rellena con diferentes quesos, fiambres o verduras locales y se dobla por la mitad.
Este pan plano se prepara tradicionalmente con harina de trigo, grasa de cerdo, sal y agua.
Pero se han realizado modificaciones segรบn la regiรณn y las recetas familiares. Gruesaso mas finitas, Reemplazo Hecho con grasa, mantequilla o aceite y algunas recetas tambiรฉn agregan bicarbonato o levadura en polvo
Piadina era una comida rรกpida antes de que existiera la comida rรกpida y antes era preparada por mujeres cuando regresaban de trabajar en el campo.
Tenemos chapati en India, Roti e Asia, o tortillas en Mรฉxico y muchas otras variedades de pan plano en todo el mundo, pero ยฟquรฉ diferencia a Piadina? de los cientos de panes planos que se hacen en el mundo?
Primero es que tradicionalmente se prepara con la grasa obtenida de una raza local de cerdos llamada Mora Romagnola, le da un sabor especial.
Y otro secreto estรก en la cocina “. Las piadinas estรกn hechas en fuentes planas de terracota llamadas teglie de Montetiffi. Estรกn hechas con una mezcla de arcillas de la zona, que se incendian y alcanzan los 200 grados.
