Today, my sister is going to show you how to make one of the most famous Italia desserts of all times: zuppa inglese.

Zuppa inglese can be easily found in restaurants in Emilia-Romagna, Tuscany, Le Marche and Umbria. It is a dish that goes back to the 16th century. According to the legend, Maria d’Este, wife of King James II of England, fell in love with the English trifle. When she returned home, in Italy, she asked her cooks to reproduce the dish. They prepared their own version by using locally produced ingredients and what they managed to make was an astonishing and equally delicious dessert! This is not the only legend you can find. The origins of zuppa inglese are in fact a bit of a mystery. What we are sure of is that it is one of the most wonderful, colourful and tasty desserts you could make and eat!

INGREDIENTS (for 4 medium cups or 6 small cups)

2 eggs
1/2 liter of milk
100gr of sugar
50gr of flour
25gr of cocoa
Vanilla extract (liquid or powder)
Alchermes liquor or rum
Savoiardi or finger biscuits

To decorate
Dark chocolate
Crashed biscuits
Whipped cream

PREPARATION

Wish the eggs with the sugar. Add gradually the flour and keep whisking. Then add the milk slowly, while whisking.

Pour the mix in a small sauce pan and place it on low heat. Stir while cooking until it thickens. When the mix has thickened and turned into custard, turn the heat off. Divide the custard in two parts. Add 25gr cocoa to half of the custard and mix until it becomes an homogeneous chocolate cream. Place plastic films over the creams to prevent their surfaces from drying.

Chop some Savoiardi or finger biscuits and place them at the bottom of each cup. Wet the biscuits with either alchermes or rum. Spread a first layer of chocolate cream followed by a layer of custard. Add another layer of wet biscuits and then, another layer of chocolate and a final layer of custard.

Decorate each cup with crashed biscuits, chocolate and/or whipped cream.

Leave the cups of zuppa inglese in the fridge for at least 2 hours.

Better served cold.
