These Italian Donuts/ Fritters are crisp on the outside and soft in the inside. I love that these donuts are very quick to prepare and the hint of lemon gives these little goodies a touch of summer! The best part is that you won’t be needing yeast or an electric mixer for this!
This is how to make Italian Donuts/Fritters:
Italian “Frittelle”
Ingredients:
4 Eggs
120 g Sugar/ ½ Cup
1 Tbsp Vanilla Sugar
50 ml Vegetable Oil/ 1/4 cup
50 ml Milk/ 1/4 cup
Juice of 1/2 Lemon
1 tsp lemon zest
300 g All Purpose Flour/ 2 Cups
3 tsp Baking Powder
Vegetable Oil (for frying)
3 Tbsp Confectioner’s Sugar for dusting
Directions:
1. In a medium mixing bowl, combine the eggs, sugar, vanilla sugar, milk, vegetable oil, lemon juice and lemon zest.
2. With the help of a fork, begin to mix all of the ingredients.
3. Now you can gradually add the baking powder and flour to the mixture; mix everything until well combined.
4. Heat the vegetable oil in a medium pot. *To understand if the oil is at the right temperature, dip a wooden skewer into the oil. When many bubbles begin to form around the skewer, the oil has reached the perfect temperature. It should be around 170°C/338°F.
5. Start to fry the fritters with the help of two teaspoons: one teaspoon is to scoop the dough and the other teaspoon is to scrape off the dough.
6. Let them cook on both sides until they turn golden brown and have become puffy.
7. Take the fried fritters out of the pot by using a slotted spoon.
8. Let the fritters drain well and cool on a plate with a paper towel.
9. Transfer the fritters to a serving dish and dust them generously with some confectioner’s sugar.
