Hey everyone! This week we’re doing something very special. I’m showing you how to make the most perfect authentic Italian “pasta al forno”, otherwise known as Baked Pasta. My favorite pasta for this type of dish is Rigatoni because they take on the flavor of the sauce so well. I’m making a tomato sauce from scratch using San Marzano tomatoes, and adding in a ricotta cheese mixture with spicy Italian sausage. This is a great dish to feed as lot of people, or a team of amazing healthcare workers! Please try this recipe out and enjoy!

Ricotta Sausage Pasta Al Forno

Ingredients:
-Olive oil
-½ Yellow Onion
-4 cloves of Garlic
-Red pepper flakes
-28oz can of crushed San Marzano tomatoes
-1 tbsp of Sugar
-Basil
-1 ½ cups of Whole Milk Ricotta
-½ cup of grated Parmigiano Cheese
-¼ cup of Whole Milk
-1 tsp garlic powder
-1 tsp salt
-½ tsp freshly ground black pepper
-Chopped parsley
– 1 lb of hot italian sausage
– 1 box of rigatoni pasta
– grated mozzarella and mozzarella pearls

Recipe:
1- Heat 2 tbsp of olive oil on medium heat in a large pot. Add chopped up onion and garlic and saute for 2 minutes until fragrant and softened. Add red pepper flakes to taste. Add in crushed tomatoes, sugar and a few pieces of fresh basil. Cover and stir every few minutes until the sauce reduces a bit. *Adjust salt and pepper to taste.
2- Combine ricotta, parmigiano, milk, garlic powder, salt, black pepper, and a handful of chopped parsley.
3- Make a small cut and remove sausage from the casing. Add sausage to a pan with some olive oil over medium heat until cooked through. Move sausage from pan to the pot of sauce and reduce the head.
4- In a pot of salted boiling water, cook the pasta 2 minutes below the regular package recommended cooking time.
5- Add the ricotta mixture to the sauce with sausage. Combine sauce with the pasta and transfer to a rectangular pan. Top with grated mozzarella and pearls.
6- In a 350 degree oven bake the pasta for 15 minutes on the middle rack, or until the cheese melts. Move the pan up and broil to get a crispy finish.
