Still stuck at home? Cook this easy pasta with pancetta mixed to a cream of potatoes and forget your sorrows!
I like potatoes a lot in any cooking style, but I do enjoy my regular fix of bacon or pancetta… so I decided to combine the 2 to create a nuclear bomb!
We are going to boil the potatoes first and then mash them into a cream with the grated Pecorino cheese. We are then mixing this potato cream with a generous portion of Rigatoni ‘al dente’ and a block of pancetta cut into small squares. Getting goosebumps?! Cook it and eat it right now then!

Pasta with Eggplants – RECIPE
Prep Time: 15 mins
Cook Time: 60 mins
Complexity: Easy
Ingredients (2 people):
200 gr pasta
250 gr Pancetta
2 potatoes
40 gr Pecorino Cheese
1/2 onion
olive oil
salt and pepper
Procedure:
1) Cut the potatoes in quarters and boil them;
2) Once soft, mash them with a blender mixing the Pecorino cheese, salt and pepper and a bit of the cooking water;
3) Chop half a onion and gently fry it in a pan;
4) Cut the Pancetta in small squares and add it to the onion;
5) Once the pasta is ‘al dente’, add it to the Pancetta and stir for 1 minute;
6) add the potato cream and a bit of the cooking water to create a creamy result;
7) Serve immediately with black pepper and pecorino cheese topping;
8) ENJOY!
