In this ‘Piatto’ video, we’ll show you how to make an Italian Panzanella recipe! This is the classic Italian bread and tomato salad popular throughout Italy.

While there are many variations of this classic bread salad recipe in Italy, here we make the version popular in the Umbria region near Tuscany. With whole slices of sourdough bread, fresh tomatoes, celery, white onions, basil, garlic, olive oil and apple cider vinegar!

This Panzanella recipe is quick, easy and makes great use of fresh summer ingredients. Serve as an Italian appetizer, or as a vegetarian main dish.

SERVES: 4-6

INGREDIENTS for Panzanella Bread Salad Recipe
Fresh Tomatoes – 2.5 pounds / 1 kilogram
Cucumber – 1, cut into thin slices
Celery – 3-4 stalks
Carrot – 1-2
Onion – 2 small (at most), to taste
Fresh Basil – 3-4 leaves
Garlic – 2 cloves
Olive Oil – 9 tablespoons
Apple Cider Vinegar – 30 ml (2 tablespoons)
Sourdough Bread – 14 slices, day or 2 old (slightly stale)
Fine Salt – 4 teaspoons
Black Pepper – 1 teaspoon
