Unsure what to do with your leftover rice? Turn it into arancini balls!
I love recycling leftovers into new dishes, and this arancini recipe is cheesy and delicious.

Ingredients:
– 3 cups Cooked rice (I used leftover fried rice, but you can use whatever you have. Feel free to add other ingredients like herbs, spices, veggies or meat to add flavor to your rice if it is plain!)
– 2 eggs
– 1-2 cups breadcrumbs
– 1 cup cheese (I used tasty cheese but you can also use Parmesan or any other grated cheese)
– mozzarella cheese (optional)
– vegetable oil for deep frying
Method:
1. Mix in 1 egg and 1/2 cup breadcrumbs to your cooked rice. It should form a fairly wet consistency but if it is too runny add more breadcrumbs and if it’s too dry add another egg.
2. Mix in the grated cheese to your rice mixture.
3. Take a handful of rice and shape into a balls (you can make them however big or small you like).
4. OPTIONAL – if you would like a cheesy and gooey centre like in my arancini balls cut small pieces of mozzarella cheese and insert in the middle of your arancini balls.
5. Once your arancini balls are shaped, lightly beat 1 egg and dip your arancini ball in the egg wash. Make sure it is completely covered in egg and then roll the arancini ball in breadcrumbs.
6. Once you’ve coated all your arancini balls in the eggwash and breadcrumbs, heat your oil in a deep pot (use enough oil so that it will just cover the arancini balls). Once the oil is hot, deep fry your arancini balls until golden-brown.
7. Once your arancini is golden-brown remove it from the oil and set on a paper towel to cool.
8. Serve your arancini with whatever you like, you can season it with salt and pepper, I also like to squeeze some lemon juice over the top.
