Hello guys ! Hope everyone is doing well. I had some time to make one of my favorite dishes today. I learned how to make this recipe from my mom and her mom taught her. It’s a family gem. We usually serve it on holidays but I was craving it! Anyone outside of our family who has tried it can say how amazing it is! You will soon learn too 😊.
**I warn you this process does take a while so have a few hours set aside for this. **

– 2 large eggplant
-2 bags of whole milk shredded mozzarella cheese
-2 cans of sauce 15oz Red Pack
-2 cans of paste 12 oz Contadina
-garlic cloves or jar of chopped garlic
-Italian parsley
-olive oil
-plain or Italian breadcrumbs
-4-5 eggs
