A kid cooking video of a secret Italian family recipe! It’s not difficult to make. You have to knead with the palms of your hands. The longer you knead, the nicer. It’s also important to use real Italian dry yeast. Fortunately you can get this also outside of Italy.

We eat the Italian flat bread with Mozzarella e Prosciutto, meaning Italian soft cheese and ham. And of course some fresh basil!

### Recipe Real Italian Focaccia, a family recipe

Ingredients:
– medium potato
– 125 gram white flour
– 125 gram Semolina
– 1 tablespoon of dry yeast
– 120 ml lukewarm water
– tomatoes, these could be old ones
– olive oil
– oregano
– coarse sea salt

How do you make Italian Focaccia

1. Peel, cook and mash the potato. Let it cool off.

2. Mix the potatoe with the flour, semolina and fine salt.

3. Dissolve the yeast in lukewarm water.

4. Add the yeast bit by bit to the flour mixture. Knead well.

5. Put the dough in an oven dish. Make sure that the dough has the same thickness everywhere. I try to make it all 2-3 cm thick. There should be room for the dough to rise to the sides and upwards. The longer you’ve kneaded, the easier this will be.

6. Let the dough rise for 10 minutes. Preheat the oven to 175 degrees Celsius.

7. Slice the tomatoes. Cover the dough with these slices.

8. Pour the olive oil, sprinkle oregano and coarse salt over the dough. The oil makes the Foccacia crispy on the top. If you eat this bread often, then don’t use too much oil and salt. That would not be so healthy. We eat it once a week, but during the lock down more often!!

9.Bake in the oven for 25 minutes or until done. Stick a skewer into the middle of the bread. When it comes out clean that the Focaccia is done!
