Italian Easter Pie

(for 1 pie)

Preheat oven to 350°

Dough Ingredients:

2 2/3 cups flour
2 tsp. baking powder
2 tsp. sugar
1 1/4 tsp. salt
3/4 tsp. black pepper
2 eggs
3/4 cup whole milk
1 1/4 tbsp. shortening

Put dry ingredients in your bowl first and mix. Make a well and add eggs, milk, and shortening. Make a soft dough. Set it aside but do keep a light cover on it so it won’t dry out.

Filling Ingredients:

3/4 cups parmesan cheese (grated)
2 cups mozzarella cheese diced into cubes (about 1/2 inch or less)
3 links of hot or mild sausage cooked and crumbled
6 eggs
black pepper

Put cheese and sausage into a big bowl. Beat eggs with a fork and pour over cheese and sausage. Mix. Add pepper to taste. (I usually just sprinkle pepper over the complete top of the mixture.)

Grease a 9” deep-dish pie pan.

Pinch off about 1/4 of the dough and set aside for the top of the pie. Roll out remaining dough to cover pan bottom and sides. Poor cheese and sausage mixture into pan. Roll out top crust, place it on pie and seal it. Poke a lot of holes in top crust with floured fork.(Flour fork between pokes!) Mix one egg yolk with a small amount of water and brush mixture on top of crust.

Bake 350° for 20 minutes. Lower temp to 300° and bake for 1 hour.
Remove pie from pan and set on cooling rack.
Let it cool, slice, and enjoy! (…or serve it warm after it sets for a wee bit.)
