I adore this cake, it has the two things that I love, chocolate and coffee.
To add to that the fact that it has no flour and itβs dairy, I could not ask for more.
Cake ingredients-
6 eggs, separated
3/2 cup sugar
5.5 oz dark chocolate ( I used 5.5 oz coacoa powder instead + 1 tsp vegetables oil, 1/2 cup water)
2 Tbsp brandy, or wine, grape juice
1 tsp instant coffee
Cream ingredients-
2.8 oz dark chocolate
1.5 oz unsalted butter or vegetables oil
2 tsp instant coffee
3 eggs, separated
3 Tbsp sugar
to make cake-
Whisk egg yolks with sugar till its thick cream
Melt dark chocolate, add chocolate to egg yolks, add brandy and instant coffee
Whip egg whites till stiff, add to chocolate mixture while gently folding in to reserve air pockets
Line up baking pan with parchment paper, bake cake in preheat oven at 350f for 40 minutes, do not open oven while cake is being baked
Take out and let cool completely
To make cream-
In a small saucepan place dark chocolate, butter or oil, and instant coffee, on low heat
Melt and cool down
Add chocolate to egg yolks, mix for 3 minutes
Whip egg whites till stiff and fold into chocolate mixture
When cake is completely cold, top with chocolate cream.
Refrigerate 4 hours before serving
