Paulie shows you one of his favorite breakfast or brunch ideas (Hell, I’ve had a frittata for dinner, even!).

Ingredients:

6 eggs well beaten

1/2 of a chopped red, and green bell pepper

1 small onion chopped (same size pieces as peppers)

4 to 5 sliced baby bella mushrooms

1 clove minced garlic

4 minced sundried tomatoes

1 tsp Italian herb seasoning

1/2 tsp red pepper flakes (optional if you don’t like spicy)

kosher salt and cracked black pepper to taste

Directions: Pre heat oven to 400F. Beat eggs in separate bowl. Prep vegetables and spices. Add all ingredients to a mixing bowl and combine well. Use extra virgin olive oil to grease sides of pan (or unsalted butter).

Cook time is 25 to 30 minutes.

Check with fork to see if finished. (fork will be clean after spot checking the middle of the frittata) I let it cool down about 3 minutes before serving. Garnish with freshly grated Parmigiano Reggiano, and I also love chiffonade of fresh basil as well!!
