Today we have another one of our all-time favorite Keto recipes to share with you, Saltimbocca.
This keto diet recipe was inspired by one of our visits to my family in Rome, Italy. We adapted it slightly to be a better fit for the ketogenic diet. We’re also using pork loin instead of veal, which is traditionally used but more expensive here. It’s very easy and fast to prepare and requires only a few ingredients. We’re confident you’ll love it as well!
Even though we’re eating a mostly carnivore style ketogenic diet right now, we feel that the sage, the olive oil and the dry white wine are worthwhile additions. You can skip those though if you want to be closer to zero carbs or if you have problems digesting certain plant products.
Here are the ingredients that we used:
– 500g boneless pork loin
– 75g bacon
– 50g butter
– 4 Tbsp olive oil
– some fresh sage leaves
– 4 Tbsp dry white wine
– toothpicks
– salt & pepper
Instructions:
1. Cut the meat into small pieces
2. Add a small slice of bacon on top of each piece of meat
3. Add some sage on top of each
4. Use some toothpicks to hold each piece and the ingredients together when cooking
5. Heat two pans to medium high heat
6. Add 25g butter and 2 Tbsp olive oil to each pan
7. When sizzling, add the meat ‘bacon side down’
8. Set a timer for 2m30sec. While waiting, salt & pepper the meat
9. When the time is up, flip it around and add 2 Tbsp dry white wine to each pan
10. Wait 2-3 more minutes and you’re done!
