Here are the ingredients needed for my Red Beet and Goat Cheese Fettuccine:
6oz dried fettuccini
2 tablespoons olive oil
½ cup diced white onion
1 cup cooked and peeled beets, cubed
1 cup vegetable broth
¼ cup heavy cream
½ cup goat cheese
Extra virgin olive & fresh basil to finish
Salt and freshly ground pepper
