Enjoy this new recipe for Confetti Corn Salad, which you can find at our new Rivertown Smokehouse. It’s great on its own, or as a topping on your favorite sandwich.
INGREDIENTS:
– 3 cups Frozen Corn
– 2 chopped Cucumbers
– 1 chopped Red Pepper
– 1 chopped Green Pepper
– 1 chopped Red Onion
Dressing:
– 1.5 cups Italian Dressing
– 2 tbsp Dijon Mustard
– 2 tbsp Vinegar
– 4 tbsp Lemon Juice
– 4 tbsp Sugar
– 2 tsp Salt
– 1 tsp Black Pepper
STEP BY STEP INSTRUCTIONS:
Cook corn until tender. Rinse under cold running water or put in an ice bath. Drain well. Chop cucumber, red & green peppers, and onion. Add to corn in large bowl. In a small bowl, mix Italian dressing with other dressing ingredients, then pour over corn mixture and toss well. Chill for 2 hours before serving.
