Marinate the chicken thighs for an hour (or overnight) in a bowl with olive oil, vinegar, Italian seasonings and garlic. Put the chicken and the marinade in a baking pan. Roast in the oven at 350°F for 45 minutes. Slice and dice the cabbage. Put the pan juices from the chicken into a frying pan. Sauté the diced cabbage in the pan until it is soft and translucent. Dice the chicken meat, and add it to the cabbage. Kitchen shears or scissors can be used to dice the meat easily and safely. Cover the pan with a lid, and simmer on low, until flavors are blended, 10 to 15 minutes.
Sweet potatoes as a side dish: To boil sweet potatoes, scrub them, put them in a saucepan with water to cover, and boil for half an hour, or until soft when pierced with a fork.
