This a really important recipe to me and my family. I have a lot of memories making fresh focaccia with my grandma to enjoy it with my family. During this difficult time where many people are stuck inside, you may find yourself with more time to try new recipes and share them with the people you love.

Focaccia is a great and versatile bread to eat as a side with steak or chicken, or to make paninis with. You can also make it a variety of ways by adding sliced tomatoes, potatoes, or herbs on the top. Use your imagination and explore variations of this recipe!

Fresh Focaccia Recipe//
This is a recipe that sometimes takes practice. If it is too wet, knead in more flour. Too dry? Add a tiny bit of water at a time until it reaches the right consistency. This is a recipe that does not always turn out the exact same, but will still taste good if you follow the basic ratios. You can half or double the recipe. This recipe makes about 1 full sheet of bread.

Ingredients:
2.5 cups warm water. I you have a thermometer, it should be about 90-110 degrees F
4 teaspoons sugar (about 16 grams)
4.5 teaspoons active dry yeast (or 2 packets that are .25 ounce each)
7 cups all purpose flour
1/2 cup olive oil (more for the top and to grease the pan)
2.5 teaspoons sea salt.
Fresh herbs (we used rosemary in this recipe)

Add warm water, sugar, and yeast into a large bowl. Lightly stir and leave for about 5 minutes.
Add in a bit of flour (about 1 cup), stir lightly, and let sit for another 5-10 minutes.
Slowly add in the rest of the flour, oil, and sea salt (stir in with a spatula)
Once everything is mixed together, flour your hands and take the dough out. Knead it as shown in the video about 10-15 times.
Form the dough into a ball, and put back into a greased bowl.
Cover the bowl with a warm damp cloth, and let rise for about 1 hour. It is best for it to be a bit warm, either by a sunny window or you can turn the oven light on and leave it in the oven.

When the dough has about doubled in size, turn the oven on to 400 degrees F.
Cover the bottom of a baking sheet with a thin layer of olive oil, and spread the dough out onto the sheet. Make dimples all over the dough with your fingers, and add olive oil on top. Cover with plastic film and let sit while the oven preheats (about 15-20 minutes).

When oven is heated, remove film, and bake for about 20 minutes or until the top is slightly golden brown.
Remove from oven, let stand for 5-10 minutes, and enjoy!
