Ingredients for Tiramisu:
– Cold espresso
– Liquor
– 4 eggs
– Mascarpone – 500g
– Ladyfingers biscuits
– Powdered sugar – 200g
– Cocoa powder
Preparation:
• add some liquor to espresso;
• separate egg whites and yolks and beat whites and 100g of sugar powder with a blender machine;
• do the same thing with yolks. Add another 100g of sugar powder and beat all together until the yolks become thick, moussey and lemon-colored;
• then add mascarpone cheese to the yolks and mix it until it is smooth;
• and as a last step to finish our tasty cream, add very gently egg whites. I suggest to mix them with your hands, not using machine. So that whipped whites will make our cream airy. Mix until there are no lumps;
• dip each ladyfinger into the coffee – it should be a fairly quick dip that moistens the cookie without getting it soggy. And place them in a square serving dish until you have a full layer of cookies;
• cover ladyfingers with the half of mascarpone mixture cream;
• make a second layer of lady fingers.
And put the rest of the cream on the top.
• cover the cake with plastic wrap and refrigerate for at least 6 hours – overnight is ideal;
• sprinkle the cacao powder on top.
