INSTANT POT YELLOW RICE and BEANS│LOCK-DOWN Easy Recipe

Today we are making a super easy dump & go INSTANT POT recipe – perfect for meal prepping! With everything that is going on in the world, unless you absolutely have to go out – the best thing you can do is to stay home. This recipe is perfect for using up whatever you have in your pantry. If you don’t have the beans I’m using, substitute any other canned beans you prefer. If you don’t have the fresh cilantro, garlic or shallot – use dried spices only and it will be delicious. INGREDIENTS:
15 oz can Great Northern Beans (rinsed and drained)
3 packets Sazon Seasoning
2 cups White Rice (rinsed and drained)
2 cups Filtered Water
Handful of Fresh Cilantro (substitute 2 teaspoons Dried Cilantro)
1 small Shallot (substitute 2 teaspoons Onion Powder)
4 Garlic Cloves (substitute 1 tablespoon Garlic Powder)
2 teaspoons Olive Oil
Salt & Pepper to taste

Sazon Seasoning Alternative
1 tablespoon ground coriander.
1 tablespoon ground cumin.
1 tablespoon ground annatto seeds
1 tablespoon garlic powder.
1 tablespoon pink salt.
2 teaspoons oregano.
1 tsp ground black pepper.

INSTRUCTIONS:
Remove skins from shallots and garlic. Add to a blender with cilantro and puree to desired texture. Add all ingredients to the instant pot. Stir. Making sure silicone ring is on, close the lid. Set instant pot to HIGH pressure for 4 minutes. Allow 10 minutes of natural pressure. Perform a quick release. Fluff rice and season to taste. Enjoy!
