In this week recipe I am making a classic Italian Parmigiana, in a different way: deliciously mozzarella filled roll-ups. 1 Whole Eggplant
2 TBS Olive Oil
1 Garlic Clove
425 GR | 15 OZ Tomato Sauce
1 Bunch of Fresh Basil
250 ML | 8.5 OZ Canola Oil
130 GR | 1 Cup Flour
1 Mozzarella – Cut into strings
60 GR | 1/2 Cup Pecorino Romano
60 GR | 1/2 Cup Breadcrumbs
Salt and Pepper to taste.
