The cake comes out to be very light, fluffy yet rich at the same time.
Ingredients
For the cake
6 egg whites
4 egg yolks
3/4 cup sugar powder
1 tsp vanilla essence
2/3 cup milk
1+1/4 cup maida or all purpose flour
1+1/2 tsp baking powder
60 grams butter or 4 tsp oil
pinch of salt
For Coffee syrup
2 cups water
1+1/2 tsp espresso powder
3 spoons golden rum
For the filling
400 grams heavy cream + 5-6 tsp sugar powder
500 grams mascarpone cheese
6 egg yolks
3/4 cup sugar powder
1 tsp vanilla essence
2 tsp milk
Unsweetened cocoa powder – 1 cup
