POLENTA IN A CONE – VENEZIA STYLE ๐ฎ๐น

In this series:
Meet Manuel from Street Polenta! He’ll give you the recipe for one of his signature dish: polenta with gorgonzola sauce topped with crispy pancetta and crunchy walnuts.
Serve as a starter in a homemade cone or glass or as a main course in a small dish or bowl.
INGREDIENTS (for 6 persons!)
100 g of cornflour
4DL water
4g salt
50g Gorgonzola cheese
2cl cream
A little extra virgin olive oil
Toppings:
Pancetta (Italian bacon)
Toasted walnuts
PROCESS:
1)Boil water and add salt as corn flour slowly. Stir well to avoid lumps. Turn down to its lowest heat, put the lid on and cook the polenta for 1.5 hours.
Meanwhile:
2)Melt 50g Gorgonzola in a pan and add 2 Cl cream. Be careful not to bring the sauce to the boil, as it then discards
3)Cut the Pancetta into dice, place them in a pan or a pot and fry the cubes until they get dark brown.
4)Toast the walnuts in a pan with a bit of olive oil. (Manuel is using extra Virgin olive Oil)
Serve the polenta in your cone, glass or bowl, pour the gorgonzola sauce over and top with crispy Pancetta and walnuts.
