Canned Tuna Spaghetti:
– 2 tablespoons olive oil
– 2 large cloves garlic minced
– 1 (5 ounces) can tuna, drained I prefer tuna packed in oil
– 1 teaspoon lemon juice
– Parsley for garnish
– Kraft parmesan cheese
– Salt & pepper to taste
– 4 ounces of spaghetti pasta
Easy Bean Salad:
– 1 Can of black beans
– 1 Can of chickpeas
– 1 Can of corn
– 1 Can of marinated artichoke hearts drained and chopped
– 3 cloves of garlic minced
– 3 tablespoons of olive oil
– 3 tablespoons of balsamic vinegar
– Dry parsley for garnish
– 1 teaspoon crushed dried oregano
Simple Pesto Fusilli:
– 1/2 cup of pesto
– 1/4 cup of pine nuts
– 2 Cups of fusilli pasta
– 1/4 cup of sun-dried tomatoes
– 1/2 can of cut green beans
– Kraft parmesan cheese
Tuna and Vegetable Fried Rice:
– 2 tbsp of vegetable oil
– 1 tsp of garlic
– 1 tsp of ginger
– 1/2 cup of frozen mixed vegetables
– 1/4 cup of corn
– 1/2 can of peas
– 1 cup of rice
– 1 can of tuna
– 1/4 cup of soy sauce
– 1 Tsp sesame oil
– 3 eggs whisked
Chef Boyardww Casserole:
– PAM Original No-Stick Cooking Spray
– 1 cup frozen loose cut spinach leaves
– 2 (15 ounce) cans Chef Boyardee Beef Ravioli
– 1 (14 1/2 ounce) can Hunt’s Diced Tomatoes drained well
– 1 1/2 teaspoons dried Italian seasoning
– 1 cup 1% low fat cottage cheese
– 1/2 teaspoon ground black pepper
– 1 cup shredded Italian cheese blend
– Preheat oven to 375°F
– Spray 8×8-inch glass baking dish with cooking spray
– Place spinach in a microwave-safe bowl
– Cover with plastic wrap and microwave on HIGH 2 minutes
– Squeeze the spinach dry
– Combine ravioli, drained tomatoes and Italian seasoning in medium microwave-safe bowl
– Cover with plastic wrap and microwave on HIGH 3 to 4 minutes or until mixture is hot
– Combine cottage cheese, spinach and black pepper in small bowl
– Place half of the ravioli mixture at bottom of the baking dish
– Top with half of cottage cheese mixture and 1/2 cup shredded cheese and repeat layers
– Bake 15 minutes or until cheese is hot and bubbly
