Today i am making crema di Limoncello an old recipe, easy to follow
using easy ingredients.

8 Lemon rinds
2 liters of milk (8 cups.)(Parmalat shelf-stable whole milk ) OR
(Horizon organic shelf-stable whole milk)
1 Litre (750ml) of 96 % Every Clear
1,5 kg.(7 ½ cups) Of sugar
3 Tbs. of Pure Vanilla
You only need to peel the lemons without getting too much of the white of the lemon, this will make it bitter.
Place the rinds into a bowl, preferably a glass bowl with a lid, add your 96% proof everclear alcohol make sure your lemon rinds are covered, press them down if needed.
THIS MIXTURE ABOVE STAYS FOR 48 HOURS, THEN YOU ARE READY FOR THE NEXT STEP
In a pan place your 1,5 kg.(7 ½ cups) of sugar with the milk and let this heat up, DO NO BOILING !
When the milk is just warm, you can use a thermometer, it should read
60 degrees fahrenheit, or you can place a finger into it should be cool.
Proceed to add the liquid you drained from the lemon and alcohol,
place it in the milk and turn slowly to incorporate them.
You are now ready to place this mixture into bottles, make sure you them well, place them into the freezer till you are ready to use.
I advise taking it out at least 5 min before serving or till you can see that it’s creamy again shaking it a little so that the crystals melt.
Enjoy this liquor , it’s great in the summer after a good barbecue , after a meal or just to have a drink.
