Served on the hotel terrace, this dish brings together some of the ingredients and flavours that have made simple Italian cooking so enduring: toasted bread, ripe tomatoes and rich, fresh burrata.

Bruschetta has an especially fitting connection to Rome. The word belongs to Roman culinary vocabulary and traditionally refers to toasted bread simply dressed with ingredients such as olive oil, salt and garlic. Over time, countless regional and seasonal variations have developed, including the much-loved combination of tomatoes and fresh cheese.
Chef Stefano also refers in the video to Italy’s UNESCO culinary heritage. In 2025, Italian cooking was inscribed on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity, recognising the wider traditions, knowledge, craftsmanship and social culture surrounding Italian food and cooking.
