The juicy chicken breasts covered in a silky sweet lemon glaze make it a real treat. What’s more, the whole thing takes less than 30 minutes too which is an added bonus.
Did you know that Italy is one of the largest producers of lemons? Therefore it’s no surprise that they’re often featured in Italian cookery, especially in dishes from Sorrento – a coastal town in southwestern Italy famed for its charming, beautiful and extremely fragrant lemon gardens.
This high protein recipe goes really well with rice, if you’re wanting a quick option or roasted baby new potatoes in a little garlic and rosemary.
Here’s How To Make Sorrento Lemon Chicken
1. In a bowl, combine the honey, lemon juice, chili flakes, rosemary, booze, salt and pepper and set aside.
2. Add the olive oil to the pan and add the chicken breasts. Gently fry for around 10 minutes or until they are thoroughly cooked through.
3. Pour the sauce mixture over the chicken and gently simmer for a few minutes until it has reduced and thickened.
4. Serve the chicken and sauce with a slice of lemon, your favourite vegetables and garnish with the fresh parsley.
