This thick crust pizza dough is awesome. Through trial and error I have perfected a method with my limited resources that produces a great pizza every time. I love Costco pizza but I feel my pizza is better & this is a million times better than the likes of Domino’s etc in my opinion. You have a real sense of accomplishment when you eat it.
I use a bread maker, cast iron skillet, & an oven that reaches a max heat of 350c. You can make the dough by hand, but I don’t have the time for that so I prefer the convenience of my bread maker.
Pizza Dough
180g water
240g bread flour
40g all purpose flour
8g sugar
5g salt
12g shortening
3g dry yeast
1 Tbs olive oil
Tuna Mayo & Shrimp
Pizza sauce
Parmesan cheese
Diced red onion
Cheese
Canned tuna mixed with Japanese ‘Kewpie’ brand mayonnaise & sweet corn
Pre-cooked shrimp
green peppers
Sliced black olives
Put pizza dough ingredients into a bread maker and set it to pizza dough setting. My machine takes around 90 minutes to make the dough.
When the dough is ready (on a floured surface) roll or stretch the dough into a circle that will fit into your cast iron skillet. All I do is just press the dough with my fingers until it reaches the right size. It is super easy & requires no skill. Dust the skillet with semolina (or corn flour, flour etc).
Carefully transfer the dough to the skillet, pressing the dough up to the edges. Spread the pizza sauce over the dough. Add the toppings. Set it aside (off the heat) for 30 to 40 minutes to proof the dough (aka letting the dough rise with ingredients on top).
When the dough has risen (proofed) place the skillet over a low heat and heat the base until it is lightly golden. This only takes few minutes so regularly use a spatula to check the color of the base. You don’t want to burn it. You are looking for a very light golden color.
Transfer the pizza to the oven. Bake at 350c for 15 minutes. My skillet is too big to fit into my wee Japanese oven so I use a pizza peel to transfer the pizza. If your skillet fits into your oven, place the whole skillet it in your oven & you might have great results.
When the pizza is ready, remove it from the oven. Let it cool slightly, slice & eat!
