Welcome to the 2nd day of my 12 Days of Christmas! Today I’m sharing our Eggplant Parmesan and Chicken Parmesan Recipe. This Italian Christmas Dinner is not traditional in Italy, but it is in our home. I hope you also enjoy the two turtle doves, chocolate and caramel turtle recipe.

Chocolate Caramel Turtles
INGREDIENTS
* 1 cup Pecan halves
* 16 chewy caramel candies
* 1 cup dark or milk chocolate chips
Eggplant & Chicken Parmesan
* 3 eggplant, peeled and thinly sliced
* 2 eggs, beaten 4 cups Italian seasoned bread crumbs
* dried oregano
* fresh basil
* Italian seasonings
* salt & pepper
* shredded mozzarella cheese
Preheat oven to 350 degrees F
Dip eggplant or chicken slices in egg, then in bread crumbs.
On a frying pan, fry each side of the breaded eggplant or chicken until brown.
If you making the chicken parm, place in a single layer In a 9×13 inch baking dish.
For the eggplant part, layer as shown.
Bake in preheated oven for 45 minutes.
Marinara Sauce
2 large cans of crushed tomatoes
large basil leaves
dried oregano
Italian seasonings
rosemary
1 garlic clove
In a large heavy pot place water to approximately 1 inch depth
Simmer garlic in water
Add tomatoes and seasonings
Simmer for 2hrs, stirring every 10-15 mins
Cheese Bread
1 large bag shredded mozzarella
1/2 large white onion
1 jar of capers
Dash of white wine vinegar to taste
italian seasoning
oregano
salt & pepper
1 loaf of french bread
Slice the bread as shown above
Scoop the inside of the bread out
Fill the bread with
the cheese mix
Close like a sandwich and slice on a diangle
Wrap in aluminum foil
Bake at 350 degrees fro 15mins.
