My 17-year-old DD made Italian pasta salad completely from scratch โ no bottled dressing, no mayo, no shortcuts.
Brenna took the lead on this one, and Chef Mom just supervised (mostly). The whole thing comes down to a scratch vinaigrette made with real olive oil, red wine vinegar, fresh lemon, garlic, and one pro move: holding back part of the dressing until right before serving, so the pasta doesn’t drink it all up and turn dry by the next day.
