The salty, creamy feta cut into cubes helps create the grid into which you can plop those sweet, juicy cherry tomatoes. I mean c’mon! the checker look is genius right? Next drizzle over olive oil and balsamic vinegar to bring richness and a touch of tang. Fresh basil and lemon zest brighten each bite, and a sprinkle of red pepper adds a kick of heat. Feta Cherry Tomato Checkerboard Salad Recipe!

INGREDIENTS:
Serves 8 (1/2 cup) Total 10 min.

1 (8-oz.) block feta cheese, cut into 18 (1-inch) cubes
18 cherry tomatoes (from 1 [12-oz.] container)
2 Tbsp. extra-virgin olive oil
1 tsp. fresh basil leaves
½ tsp. grated lemon zest (from 1 small lemon)
⅛ tsp. crushed red pepper
Flaky sea salt (optional)
1 Tbsp. balsamic vinegar
Crusty whole-wheat baguette slices, toasted (optional)

DIRECTIONS:
1. Arrange feta cubes and cherry tomatoes in an alternating checkered pattern to create a 5 1/2- x 5 1/2-inch square on a large plate. Drizzle with olive oil. Sprinkle with basil, lemon zest, crushed red pepper, and salt, if using. Pour balsamic vinegar around the sides of the board.
2. Serve with baguette, if desired.
