If you’ve ever watched UncleChaps ask someone a geography question they had absolutely no chance of getting right… this one’s for you.
While I was in Chicago, Chaps from Drop a Pin and Barstool Sports met me at Johnny’s Beef for one of the city’s true institutions: an Italian beef.
The only real question: Dry, wet, or dipped?
We both went dipped.
Messy, juicy & exactly how an Italian beef should be. It’s one of those sandwiches that asks you to commit from the very first bite.
For the pairing, I brought Saints Hills Black Dalmatian 2021 — a 100% Plavac Mali that’s juicy, savory & loaded with dark fruit. It has just enough freshness and lift to keep pace with all that beef while still letting the sandwich stay the star.
Between bites, Chaps did what Chaps does best and started firing off geography questions. I felt a lot more confident talking about wine and sandwiches than I did identifying countries.
A legendary sandwich, a geography quiz I wasn’t prepared for & another reminder that Chicago knows exactly what it’s doing.
