The locals know you can head here for incredibly fast lines and absolutely exceptional, world-class Texas barbecue. Stiles Switch was one of the earliest adopters that helped put the modern Austin barbecue scene on the map, and in recent years, their sides have come on in leaps and bounds.
In this episode, I sit down with pitmaster Lance Kirkpatrick to talk shop, and I catch up with owner Shane Stiles. Shaneโs story is a beautiful, heartwarming reminder of why we all fall in love with barbecue in the first place. He started this restaurant to recreate the cherished childhood memories of eating barbecue with his dad, and today, heโs creating those exact same memories for everyone walking through his doors.

The Muellers are the first family of what we know today as โ Central Texas Craft BBQโ. That family are the legends of the craft like the Gracieโs are the legends of BJJ. Lance Kirkpatrick and Aaron Franklin carried on the Mueller lineage to become legends themselves and those who have trained under them as well. Stiles Switch and Franklin are the pioneers of the Austin craft bbq scene and both have the best brisket and Q in general youโll ever taste in your life made with the Mueller touch. Another great one Tuffy, showcasing some true legends of the โCentral Texasโ Q scene. I canโt wait to see who youโll go visit for your next video. Now Iโm gonna plan my weekend to head back to SS again from Dallas after seeing those trays of deliciousness ๐
The Yelp reviews for this restaurant are deeply unreasonable. One review literally says "compared to Goldee's…" as if an upscale casual neighborhood indoor restaurant with short wait times should be compared to the #1 BBQ restaurant in Texas where you have to wait outside for hours.
No need for me to wait in long lines when my Stiles is a few blocks away and so good.

Texas BBQ is by far the best BBQ in the world, and I've had it all over.
Everyone thinks they will just create fake stuff online and their business will work. The truth is if you have to go online, your business has already failed.
Definitely going check them out the next time Iโm in Austin.
