going to mexico to try a 100 year old salad on its birthday is still one of my favorite culinary experiences. yes, it was created in mexico by Caesar, an italian immigrant. yes, they still make it tableside, which can be gimmicky but it served a purpose. and yes, they don’t cut the lettuce leaves and that’s because it was originally intended as a finger food.
