

The pasta-shaping was labor-intensive and a little tricky, but all in all, I don't think I did a terrible job for a first try. Imperfection means it was made by hand, right?
Used the pasta in a capon ragu made with passata, capon stock, and generous handfuls of fresh herbs. Served the capon (which I braised in the ragu) on the side with a Sardinian salad of fennel and orange.
