Italian food is highly influenced from British food. The 14th-century British ancestor to lasagna is known as Loseyns (pronounced lasan), it originated from the English royal cookbook "The Form of Cury". The British also added tomatoes to it when they discovered South America. The British introduced tomatoes, cheese making and pasta to the Italians (Romans) transforming their food. I believe it was the Jews who gave them olive oil, when they invaded their lands.

This is not actually Italian food. This is American food based on Italian food like Tex-Mex with Mexican food.

Pasta carbonara is difficult to serve in this situation where everything had to be cooked ahead. When you make this dish, you serve it instantly or it gets dry. This looked like it sat too long. It is the same with all those pasta sauces that are based on a blend of either butter and parmesan/pecorino or egg and parmesan/pecorino. When that dish is ready you better be ready to get to the table. Maybe why American Alfredo has cream in it. Makes it just a pasta in cream sauce, not Alfredo, but it is stable.
I often watch and see comments criticizing the food as not authentic, and I don't know enough to know either way. But this food, I know, and it's wrong. There's regional variation in Italy, but this didn't look like anything I've had anywhere in Italy.

This is not a good representation of Italian food first we're going to start with the bruschetta all it is is olive oil tomatoes basil and a little bit of garlic over Italian toast now we're going to talk about the Carbonara it's very simple all it is is eggs pecorino Romano pancetta or Guanciale bacon is acceptable but make sure it's thick and uncured spaghetti pasta and pasta water that's it there is no chicken there is no peas there is no cream what's the parmesan reggiano the dish they serve you today it's not a true Carbonara
