500g bread flour
475g warm water 2cups 90°F
9g yeast
20g salt
10g sugar
30g olive oil
Mix until shaggy DO NOT KNEAD then rest 30 mins
Then stretch and folds rest 30 mins
Then coil fold and rest 30 mins
Another set of coil fold and rest 30 mins
Then add it to a pizza pan or sheet tray to proof another 30 mins
Dimple and top
Bake at 550° for 10 minutes
