Ingredients:
1/2 cup tomato sauce1/4 cup water2 tbsp olive oil4โ5 fresh basil leavesParmesan, Pecorino, or Grana Padano cheese (enough to fully cover your pan)2โ4 eggsSalt & pepper, to tasteExtra fresh basil for servingToasted bread, for serving
Instructions:
Add the tomato sauce, water, olive oil, and basil to a blender and blend until smooth.
Lightly coat a nonstick pan with a thin layer of olive oil.
Grate a generous layer of Parmesan, Pecorino, or Grana Padano into the pan so the bottom is completely covered.
Crack the eggs directly over the cheese.
Turn the heat to medium-high and cook for 2โ3 minutes, until the cheese becomes deeply golden and crispy.
Pour the blended tomato sauce around the eggs.
Cover with a lid and cook for another 2โ3 minutes, or until the eggs reach your desired doneness.
Season with salt, pepper, and extra fresh basil.
Serve immediately with toasted bread for dipping.
