Crispy Parmesan Chicken Bites with Creamy Garlic Pasta

Ingredients
Chicken Bites
* 1 lb boneless, skinless chicken breast
* Salt and black pepper, to taste
* ¼ cup cornstarch
* ¼ cup all-purpose flour
* 2 eggs, beaten
* 1 cup panko breadcrumbs
* 1 tsp Italian seasoning
* ¼ cup grated Parmesan cheese
* Neutral oil, for frying
Creamy Garlic Pasta
* 8 oz pasta of choice
* 2 tbsp butter
* 4 cloves garlic, minced
* ¾ cup heavy cream
* ½ cup grated Parmesan cheese
* Salt and black pepper, to taste
* 2 tbsp fresh parsley, chopped
* ¼–½ cup reserved pasta water
For Serving
* Extra grated Parmesan cheese
* Additional chopped parsley
Instructions
1. Prepare the Chicken
1. Pound the chicken breasts to an even thickness.
2. Cut into bite-sized squares.
3. Season lightly with salt and pepper.
2. Bread the Chicken
1. In one bowl, combine the cornstarch and flour with a pinch of salt and pepper.
2. Place the beaten eggs in a second bowl.
3. In a third bowl, mix the panko breadcrumbs, Italian seasoning, Parmesan cheese, salt, and pepper.
4. Dredge each chicken piece in the flour mixture, then the egg, and finally the panko mixture, pressing gently so the coating adheres.
3. Cook the Chicken
1. Heat a thin layer of oil in a cast-iron skillet over medium heat.
2. Cook the chicken bites in batches, turning occasionally, until golden brown and cooked through, about 4–6 minutes per batch.
3. Transfer to a wire rack or paper towel-lined plate.
4. Cook the Pasta
1. Bring a pot of salted water to a boil and cook the pasta until al dente.
2. Before draining, reserve ½ cup of pasta water.
5. Make the Garlic Parmesan Sauce
1. In a separate skillet, melt the butter over medium heat.
2. Add the minced garlic and cook for 30–60 seconds until fragrant.
3. Pour in the heavy cream and bring to a gentle simmer.
4. Stir in the Parmesan cheese until melted and smooth.
5. Season with salt, pepper, and parsley.
6. Finish the Pasta
1. Add the cooked pasta directly to the sauce.
2. Toss until evenly coated, adding reserved pasta water a little at a time until the sauce reaches a silky consistency.
7. Plate and Serve
1. Spoon the creamy garlic pasta onto plates.
2. Top with the crispy Parmesan chicken bites.
3. Finish with extra Parmesan cheese and a sprinkle of fresh parsley.
