Ingredients:

3 medium beets
16 oz rigatoni
1 cup raw walnuts
1 ½ cups cookedbrown lentils
1 medium red or yellow onion, finely diced.
4 large cloves, minced or grated.
3 tbsp tomato paste
1 can (14.5 oz / 410g) fire-roasted tomatoes.
½ cup vegetable broth
1 tsp thyme
1 tsp dried oregano.
1/2 tsp smoked paprika
1/2 tsp red pepper flakes.
1 tbsp balsamic vinegar
1 tsp lemon juice
Salt & Pepper: To taste

  2. That looks interesting. I usually make it with chopped, tinned tomatoes, red lentils, onions, celery and herbs. I have never thought of adding beetroot and walnuts though. Something new to try.

  3. Dang generally meals haven't received education but that pasta is well red hahaha looks delicious beets are really good for you and give good energy

  4. I love adding nuts of all kinds to my cooking, especially pasta and my fan-favorite stuffed peppers. Great way to add some texture and extra protein and other good nutrients. I just made a pasta salad with broccoli, sun dried tomatoes, olives…AND some quartered hazelnuts. Dressed just with good evoo and fresh herbs (oregano, parsley, dill, which made it really pop) and salt and pepper.
