This is an immigrant story.
New York pizza didn’t come out of nowhere—and it didn’t replace Italian pizza. It was built by Italian immigrants who took what they knew from Naples and reshaped it to survive in a completely different world. Different ovens. Different flour. Different city. What they created wasn’t a copy—it was an evolution.
In this episode of Fantastic Food Files, we break down how Southern Italian immigrants brought pizza to New York and turned it into something entirely new. From coal-fired ovens to high-gluten American flour, from small personal pies to the invention of the slice—this is the secret origin behind the food that went on to define pizza for the rest of the world.
We’re also setting the record straight on some of the biggest myths:
• The truth about who really started pizza in New York
• Why the famous “New York water” isn’t the secret
• How industrial ovens changed everything
• And how a working-class street food became a global standard
This isn’t about taking anything away from Italy. If anything, it shows just how powerful Italian food culture is—strong enough to adapt, survive, and evolve across continents while still holding onto its identity.
Because New York pizza isn’t less Italian. It’s Italian-American—shaped by history, necessity, and ambition.

The video is just wrong.
Pizza in Italy and most of Europe is eaten in the same way. The Pizza is cut into slides and each slide is folded and eaten by hand.
Then … even the 'New York' style Pizza which has bean created in the US for the US marked is still created from an Italien dish by an Italien.
Last but not least ….
Indeed, 'the New York style' Pizza is for US American taste.
In most European countries we realy prefer the Italian style of Pizza and Pasta.
