Ever wondered why food just tastes better in Italy? It’s not just the ingredients, it’s the rules. Here are 5 unwritten rules for eating and drinking like an Italian – part 1.

1. Gas station food is shockingly delicious
Forget soggy sandwiches and bad coffee. Italian highway stops (Autogrill) are a whole experience – proper espresso, fresh panini, pasta made on the spot, and freshly squeezed orange juice (spremuta). You stop for fuel and leave with a prosciutto panino.
2. Pasta isn’t a cheat meal
In Italy, pasta is everyday food. It’s made with high-quality durum wheat or crafted al bronzo, giving it that rough texture that holds sauce perfectly. Slow drying preserves flavor and nutrients, and when cooked al dente, it’s satisfying without feeling heavy. Italians respect their carbs and eat them well.
3. Coffee isn’t for mealtime
Coffee comes after. You eat, pause, then order an espresso. It’s quick, strong, and intentional, not something to sip alongside your meal.
4. After the meal, slow down
Once you’re done eating, service fades into the background. This isn’t neglect, it’s culture. Italians linger, talk, digest, and stretch the moment. The bill only comes when you ask. The meal ends when you decide.
5. Cheese and seafood don’t mix
Cheese is thought to overpower delicate seafood. The one exception? Anchovies. They’re treated more like a seasoning – adding depth and umami, like in fiori di zucca with melted mozzarella.
